A few weeks ago I told you about my plans to cook and try more new recipes. I have been very busy due to Xmas and have not managed to try something new every week, but I have not forgotten.
Today I have another very tasty, super easy and quick recipeÃ‚Â to share.
Summer Herb, Chicken, Feta & Courgette Risotto
You will need:
2 tbsp olive oil
500g courgette halved and thinly sliced
2 large chicken breasts diced
350g arborio risotto rice
2 cloves garlic, crushed
1.2 litres vegetable stock
25g pack fresh basil, chopped
20g pack fresh mint, chopped
100g Greek feta, cubed
- Heat the oil in a wide pan and add the sliced courgette and chicken. Fry over a medium heat for 5 minutes until golden brown. Add the garlic and seasoning, then cook for further minute. Stir in the rice and cook for 1 minute until coated in oil
- Bring the stock to the boil and gradually add to the rice a ladleful at a time, stirring until each amount is absorbed. Continue adding until all the stock is added and the rice is creamy ( 15-20 minutes).
- Ã‚Â Off the heat stir in the herbs and cubed feta and leave to rest for a couple of minutes. Serve!
