When it comes to cooking, I have to admit that before having children I used to love spending time in the kitchen much more. Then I went through a stage when my little ones were desperate to help me with making family meals. Unfortunately, I was just not that much into it as I hated the mess, and to be honest, it was kind of stressful for me.

As both girls are growing up, this has been changing and with my second born daughter I am much more relaxed and I am happy to say we often cook and bake together these days.

You could have seen me blogging about fitness and health on my other blog Fitness 4 Mamas, so you might know how much passionate I am about leading and promoting a healthy lifestyle and also helping others to do the same.

Last Monday I joined a few fellow bloggers for a Frylight cooking event at Food52 in London. I was very excited as I have been using their 1 kcal olive oil cooking spray and love it.

Not only I had a chance to meet Helen Bond, Frylight expert and Consultant Nutritionist, but also get some great tips on what to include in our healthy diet, along with cooking some great tasting meals using Frylight 1 calorie cooking spray.

It is sad and alarming that nearly 40% of people make no effort to avoid saturated fats which can increase cholesterol – carrying a risk of heart disease.

One in ten people believes that trans fats (generated by industrial processing) are actually healthier than other types of fats. In fact, trans fats are considered the WORST offenders by nutritionists and dieticians! Both trans and saturated fats can increase levels of bad cholesterol in the blood, trans fats have also been shown to lower levels of good cholesterol in the body.

Mushroom Bruschetta with Balsamic, Thyme & Garlic Oil

INGREDIENTS

Frylight 1 kcal Garlic Oil Cooking Spray
Frylight 1 kcal Extra Virgin Olive Oil Cooking Spray
400g sliced chestnut mushrooms
1 tbsp balsamic vinegar
1 tbsp thyme leaves
Salt and pepper
4 slices of bread

INSTRUCTIONS

  1. Slice the mushrooms into 0.5cm slices.
  2. Spray a medium frying pan 5x with Frylight Extra Virgin Olive Oil Cooking Spray and place over medium heat. It is recommended that you start by spraying the Frylight into a cold pan, and heat the pan with the Frylight in it before adding your ingredients.
  3. Add mushrooms and sauté quickly
  4. Add the balsamic and sprinkle with thyme, then stir for another 30 seconds
  5. Season with salt and pepper.
  6. Spray bread with Frylight Garlic Oil Cooking Spray and Toast.
  7. Pile on the mushrooms & serve.

    Yum that looks absolutely delicious! I’ve used cooking sprays in the past and will definitely be going for Frylight, I’m an avocado nut (not the actual nut, just crazy for avocados lol) and I love the sound of cooking with avocado oil. I cook with coconut oil which I also love, but sometimes the boys complain when I go overboard with it… Ezra didn’t like his coconut mushrooms the other day haha. Using a cooking spray is great, as it’s light, healthy and won’t drown the food in greasiness or oily flavour. Thanks so much for letting me know about this x
